Asturias has long been recognized for its culinary arts. The region is blessed with the bounty of both land and sea. Costa Verde has a lush countryside of fertile fields, wild mountains, lush forests and clear rivers. Asturian gastronomy is a reflection of these landscapes that are an excellent supplier of the region s extraordinary delicacies. Wild, fresh fish and seafood, meat, fruit, vegetables and dairy produce, are all of the highest quality. These excellent ingredients, its freshness and variety, are the basis for the region s wonderful cuisine.

Asturian cooking is noted for its superb yet simple ingredients: the freshest fish and mariscos from the wild rocky reefs of the Bay of Biscay; salmon and trout from the rivers; lamb or venison from the mountains. No visitor to Asturias should miss eating renowned fabada , the region's white bean and pork stew. Embutidos tipicos de la tierra, morcilla, chorizo y lac , are also scrumptious.

Asturias does not produce wine but an excellent cider sidra, typical drink of the regions of green meadows. Certainly, both locals and tourists cannot get enough of this quintessential Asturian drink - hard, dry apple cider, ceremoniously poured from a bottle held overhead into wide-mouthed glasses. Asturian sidra is a definite must for anyone, especially since it s claimed to be the best in the world!

The region also has an excellent choice of cheeses. Gamoneu is exceptionally delicious but the Queso de Cabrales is hands down, the best. This soft, creamy cheese from the valley of Cabrales is wrapped in chestnut leaves and stored in humid caves for maturation. Queso de Cabrales is certainly serious competition against the best Roqueforts, Stiltons and Gorgonzolas! Popular desserts include arroz con leche, a rich, cream-rich milk rice pudding, and Spain's best butter, called mantequilla .
